Actually Jack I would telnet to the ports like so.
telnet 192.168.1.2 25

You will see what is happening pretty quickly.  The inetd.conf file lives
in /etc and it usually is the one responsible for getting mail and telnet
running.  Depending on how your system is configured mail may more may not
run under inetd.  Drop by the reflector some time and we can help you
out.  When you dropped by last night we were all off listening to a
program on techtv.
